How do you find out Stu, who owns a property or land in Scotland? do you have a scottish land registry?

Yes, there is the Land Register of Scotland which is available for the public to view.

Not all properties will be in there though. Some will still be in the Register of Sasines from when we had a feudal system of property law in Scotland (abolished in 2001).

Gradually, all titles are moving from the Sasine Register to the Land Register. Any dealing whatsoever with a property registered in the Sasine Register moves it to the Land Register.
